Adding Energy Powder to Cold Gazpacho Soup
- 1 cup cooked chicken, shredded
- 1 large cucumber, diced
- 1 large red bell pepper, diced
- 1 green onion, thinly sliced
- 2 large zucchini, shredded
- 3 cups diced tomato or 2 cans
- 2 1/2 cups vegetable stock
- 2 Tbsp. All Day Energy Greens
- 1/2 cup chopped cilantro (substitute with parsley)
- 1/4 cup balsamic vinegar
- In a large bowl, combine all ingredients and mix well. Salt and pepper to taste.
- refrigerate ideally over night or at least 5 hours.
- Serve chilled.
